Respecting nature... In 2019, we are creating the Domaine de l'Aubraine.
Located in Saint-Gengoux-de-Scissé, in southern Burgundy, in the Mâconnais region, we farm 5 hectares of vines and around ten hectares of pasture. Located in a village with a majority of cooperative farmers, we are keen to demonstrate that it is possible to work differently.
OUR VINEYARDS: Entirely worked with our horses
Our vines (Chardonnay, Gamay and Pinot Noir) are islands of biodiversity and tranquillity, living with the rhythms of the seasons. We plough the soil with delicacy and precision using our three Comtois mares. Certified organic and following biodynamic principles since we set up, we're now keen to go even further and create the 'Vine of Tomorrow'. This Agroforestry viticulture project is currently under development.
OUR WINES: They are made exclusively from grapes grown on the estate.
We make natural-style wines, with little intervention in the cellar, but with attention to the smallest detail. We aim above all to bring out the best in our terroirs, while preserving the quality of our wines. We also produce a few micro-cuvées to diversify our offer.
In the cellar, we don't interfere much...
There's no technology in the cellar, so we limit our interventions to what's strictly necessary, thanks to optimum harvest quality. When the grapes are ripe, they are picked by hand and then gently pressed, to fully respect the nature of our terroirs. After a gentle settling of the must, the indigenous yeasts give a natural start to the alcoholic fermentation. Malolactic fermentation then starts spontaneously. All our wines are matured on fine lees in stainless steel vats or oak barrels until early summer.

ぶどう畑の所有主や借地人は、年間をとおして仕事に取り組み、テロワール/terroirの表現を守り続けています。ぶどうを育て、ワインの醸造を手がけるほか、自ら販売まで携わっている例もあります。ブルゴーニュ/Bourgogneには3,800のドメーヌがあり、うち1,300のドメーヌがワインを自ら販売しています。平均栽培面積は8haです。
ブルゴーニュ/Bourgogneにおけるネゴシアンの役割は時代とともに複雑化しています。もともとは熟成途上のワインを買い取り、熟成と販売を担っていましたが、近年はぶどうを直接買付け、醸造そのものを手がける例もみられます。これは、自ら醸造するワインの品質を完全にコントロールするためです。
ぶどう栽培家を組合員とし、協働で醸造と販売の発展に取り組んでいます。ブルゴーニュ/Bourgogneには23の協同組合があり、ワインワイン生産の16%を占めています。
