The Domaine has been established in Auxey-Duresses for several generations. The Domaine's watchword is respect for its terroirs, to produce top-quality wines. For several years now, Justine has chosen "lutte raisonnée", a method of cultivation that respects the environment by working the soil.
The grapes reach perfect ripeness. At harvest time, the grapes are destemmed to give them a wonderfully rounded expression. The fruit speaks for itself, with purity and balance. The wines are matured in oak barrels for varying lengths of time, depending on the appellation, to bring out their full body and density.
ぶどう畑の所有主や借地人は、年間をとおして仕事に取り組み、テロワール/terroirの表現を守り続けています。ぶどうを育て、ワインの醸造を手がけるほか、自ら販売まで携わっている例もあります。ブルゴーニュ/Bourgogneには3,800のドメーヌがあり、うち1,300のドメーヌがワインを自ら販売しています。平均栽培面積は8haです。
ブルゴーニュ/Bourgogneにおけるネゴシアンの役割は時代とともに複雑化しています。もともとは熟成途上のワインを買い取り、熟成と販売を担っていましたが、近年はぶどうを直接買付け、醸造そのものを手がける例もみられます。これは、自ら醸造するワインの品質を完全にコントロールするためです。
ぶどう栽培家を組合員とし、協働で醸造と販売の発展に取り組んでいます。ブルゴーニュ/Bourgogneには23の協同組合があり、ワインワイン生産の16％を占めています。
