We produce wines of the Bourgogne Côtes d'Auxerre appellation on approximately 2.3 hectares.
We have established an area of truffle-producing woodland, which is monitored by the CTIFL (fruit and vegetable advisory body),
where we produce truffles on our own account. We also organise lectures and study visits on truffle-growing/hunting in Bourgogne. (€190 per group, duration 2 to 3 hours; A truffles-on-toast tasting session costs an additional €5.50 per person).
ぶどう畑の所有主や借地人は、年間をとおして仕事に取り組み、テロワール/terroirの表現を守り続けています。ぶどうを育て、ワインの醸造を手がけるほか、自ら販売まで携わっている例もあります。ブルゴーニュ/Bourgogneには3,800のドメーヌがあり、うち1,300のドメーヌがワインを自ら販売しています。平均栽培面積は8haです。
ブルゴーニュ/Bourgogneにおけるネゴシアンの役割は時代とともに複雑化しています。もともとは熟成途上のワインを買い取り、熟成と販売を担っていましたが、近年はぶどうを直接買付け、醸造そのものを手がける例もみられます。これは、自ら醸造するワインの品質を完全にコントロールするためです。
ぶどう栽培家を組合員とし、協働で醸造と販売の発展に取り組んでいます。ブルゴーニュ/Bourgogneには23の協同組合があり、ワインワイン生産の16％を占めています。
