A family Domaine that was created via the marriage of two young people coming from winemaking families in Pommard and Meursault. Their work : replanting "terroirs" in Beaune and Meursault, purchase of vineyards principally 1er cru Pommard. To ensure longetivity, we created the Domaine Virely-Rougeot, and one son, Patrick, is at the Domaine. In love with his profession, he takes exquisite care of his vines and his cellars. Traditionally vinified, his red wines are in the "cuve" for a long time which creates robust wines that are excellent for aging. They are aged in party in new barrels. The white wines are also well cared for and undergo light pressurization, decantation, and aging in barrels with stirring. The Domaine has won numerous awards and distinctions.
ぶどう畑の所有主や借地人は、年間をとおして仕事に取り組み、テロワール/terroirの表現を守り続けています。ぶどうを育て、ワインの醸造を手がけるほか、自ら販売まで携わっている例もあります。ブルゴーニュ/Bourgogneには3,800のドメーヌがあり、うち1,300のドメーヌがワインを自ら販売しています。平均栽培面積は8haです。
ブルゴーニュ/Bourgogneにおけるネゴシアンの役割は時代とともに複雑化しています。もともとは熟成途上のワインを買い取り、熟成と販売を担っていましたが、近年はぶどうを直接買付け、醸造そのものを手がける例もみられます。これは、自ら醸造するワインの品質を完全にコントロールするためです。
ぶどう栽培家を組合員とし、協働で醸造と販売の発展に取り組んでいます。ブルゴーニュ/Bourgogneには23の協同組合があり、ワインワイン生産の16％を占めています。
