Domaine Gaston et Pierre RAVAUT has been a family estate for 6 generations, the last of which is represented by Jules, who joined his father Vincent 3 years ago.
The estate produces wines from the Ladoix terroir, at the foot of the Corton hillside (80% reds, 20% whites), with all levels of appellation, matured and vinified in the greatest Burgundy tradition.
"We welcome visitors to the cellar and are happy to pass on our passion.
The cellar is open Monday to Friday from 8am to 12pm and from 2pm to 6pm, and on Saturdays by appointment.
ぶどう畑の所有主や借地人は、年間をとおして仕事に取り組み、テロワール/terroirの表現を守り続けています。ぶどうを育て、ワインの醸造を手がけるほか、自ら販売まで携わっている例もあります。ブルゴーニュ/Bourgogneには3,800のドメーヌがあり、うち1,300のドメーヌがワインを自ら販売しています。平均栽培面積は8haです。
ブルゴーニュ/Bourgogneにおけるネゴシアンの役割は時代とともに複雑化しています。もともとは熟成途上のワインを買い取り、熟成と販売を担っていましたが、近年はぶどうを直接買付け、醸造そのものを手がける例もみられます。これは、自ら醸造するワインの品質を完全にコントロールするためです。
ぶどう栽培家を組合員とし、協働で醸造と販売の発展に取り組んでいます。ブルゴーニュ/Bourgogneには23の協同組合があり、ワインワイン生産の16％を占めています。
