Nicolas Delgutte runs the Domaine de la Coquillerie which covers 4 hectares. With clay-limestone soils with a very Burgundian profile, Pinot Noir, Chardonnay and Pinot Beurot are perfectly suited to the slopes on the edge of the woods.
A parcel of Sauvignon Blanc about forty years old is also present on the estate.
During the season, the soil is regularly worked to eliminate weeds without using herbicides.

ブルゴーニュ/Bourgogneにおけるネゴシアンの役割は時代とともに複雑化しています。もともとは熟成途上のワインを買い取り、熟成と販売を担っていましたが、近年はぶどうを直接買付け、醸造そのものを手がける例もみられます。これは、自ら醸造するワインの品質を完全にコントロールするためです。
ぶどう栽培家を組合員とし、協働で醸造と販売の発展に取り組んでいます。ブルゴーニュ/Bourgogneには23の協同組合があり、ワインワイン生産の16％を占めています。
