Our estate is located in the heart of Beaune, just a few metres from the famous Hospices. Created in 2006 by Yvonnick Debray, our estate is now one of the youngest in Burgundy. It covers 4 hectares on the Côte de Beaune. In order to diversify our appellations, we buy grapes from a number of highly reputed estates wherever possible. We then vinify as naturally as possible in our cellar in Beaune. Since 2006, we have been working in a sustainable way, with a clear objective: to intervene as little as possible, whether on the vines or on the wine, so that our bottles can create emotion and perfectly express the terroirs from which they come.
ぶどう畑の所有主や借地人は、年間をとおして仕事に取り組み、テロワール/terroirの表現を守り続けています。ぶどうを育て、ワインの醸造を手がけるほか、自ら販売まで携わっている例もあります。ブルゴーニュ/Bourgogneには3,800のドメーヌがあり、うち1,300のドメーヌがワインを自ら販売しています。平均栽培面積は8haです。
ブルゴーニュ/Bourgogneにおけるネゴシアンの役割は時代とともに複雑化しています。もともとは熟成途上のワインを買い取り、熟成と販売を担っていましたが、近年はぶどうを直接買付け、醸造そのものを手がける例もみられます。これは、自ら醸造するワインの品質を完全にコントロールするためです。
ぶどう栽培家を組合員とし、協働で醸造と販売の発展に取り組んでいます。ブルゴーニュ/Bourgogneには23の協同組合があり、ワインワイン生産の16％を占めています。
