Domaines Auvigue has a long history in the heart of the Pouilly-Fuissé appellation, in its favourite Mâconnais terroir, with a vineyard nestling in the village of Chardonnay.
Since 2019, Domaines Auvigue has been based in the former Romanesque church of Fuissé, which has been completely refurbished. A veritable cathedral of wine, this is one of the most unusual sites in Burgundy, just a stone's throw from the Roche de Solutré.
The thick stone walls of this 12th-century building still reveal the pointed-arch vaults, cupola and paintings, making it a veritable showcase for the estate's white wines.
ぶどう畑の所有主や借地人は、年間をとおして仕事に取り組み、テロワール/terroirの表現を守り続けています。ぶどうを育て、ワインの醸造を手がけるほか、自ら販売まで携わっている例もあります。ブルゴーニュ/Bourgogneには3,800のドメーヌがあり、うち1,300のドメーヌがワインを自ら販売しています。平均栽培面積は8haです。
ブルゴーニュ/Bourgogneにおけるネゴシアンの役割は時代とともに複雑化しています。もともとは熟成途上のワインを買い取り、熟成と販売を担っていましたが、近年はぶどうを直接買付け、醸造そのものを手がける例もみられます。これは、自ら醸造するワインの品質を完全にコントロールするためです。
ぶどう栽培家を組合員とし、協働で醸造と販売の発展に取り組んでいます。ブルゴーニュ/Bourgogneには23の協同組合があり、ワインワイン生産の16％を占めています。
