Established in 1840, the Maison Simonnet-Febvre, which owns estates in the Chablis, Chablis Premier Cru "Mont de Milieu" and Chablis Grand Cru "Preauses" areas, vinifies and markets a wide range of wines expressing the different Chablis Terroirs.
Originally specialising exclusively in sparkling wines by the "Traditional Method", Simmonet-Febvre is now the only Chablis house producing Crémant de Bourgogne.
The house produces and ages wines from the historic vineyards of the Yonne area: Côtes d'Auxerre red, Bourgogne Aligoté, Saint-Bris, Irancy and Epineuil.
In 2013, the firm acquired a 15-hectare estate near Semur en Auxois, in the villages of Villaines-les-Prévôtes and Viserny, where they produce PGI-rated Coteaux de l'Auxois wines.

ブルゴーニュ/Bourgogneにおけるネゴシアンの役割は時代とともに複雑化しています。もともとは熟成途上のワインを買い取り、熟成と販売を担っていましたが、近年はぶどうを直接買付け、醸造そのものを手がける例もみられます。これは、自ら醸造するワインの品質を完全にコントロールするためです。
ぶどう栽培家を組合員とし、協働で醸造と販売の発展に取り組んでいます。ブルゴーニュ/Bourgogneには23の協同組合があり、ワインワイン生産の16％を占めています。
